Developing the Native Oyster from a tiny residual population to now seeing Maorach Beag - Scottish Shellfish bring the Native Oyster to the London and Scottish markets commercially once again, is a clear measure of our success in developing the Native Oyster as an economic driver for Rural Scotland and Aquaculture in general. This ecosystem will go on the clean the Dornoch Firth for generations to come. We are building a reef of shell material for the Native Oyster (Ostrea edulis) to thrive in the Dornoch Firth once more and create an ecosystem lost many years ago. We at Heriot Watt have developed another complimentary biological process with these Native Oysters as a living Bio filtration ecosystem. The DEEP project has developed from an idea by Glenmorangie to create value from Anaerobic Digestion, as an additional biological process to fermentation to create Biomethane for distillation and displace carbon in volume. It is great to see real Native Oyster aquaculture and commerce happening as a consequence of our original idea to develop the Native Oyster at significant scale, we wish the Maorach Beag every success with this fantastic Native Oyster venture. We supported the original seeding of the bed via our Native Oyster growers and this e-commerce consumer approach is justification of our claim that the Native Oyster can be grown and create jobs and revenue for Scotland whilst cleaning our coastal environment and sequestering carbon. These Native Oysters (Ostrea Edulis) sequester carbon and lay down a deep layer of carbon rich material on the reef structure and seabed creating a unique biodiverse ecosystem for other local species to survive and colonise once more. Our goal is the rewilding our own reef of Native Oysters in the Dornoch Firth to bio-filtrate the nutritious rich outflow from the awarding winning Tain distillery AD Bioenergy plant.
